Ok, just a bit of an update
Everyone (pretty much) seemingly was correct in this thread. After seeming to get "over watering" or at least the plants telling me that, I waited 2 days to water, and with NO signs of it recovering, I did what I knew had to be done.... I turned off the air stones. 24 - 36 hours from that moment, they recovered and 48 hours in, I'll be ready and confident to flip them.
I think it was a combination of everything said; Air pruning the roots - over drying - drying the ferts before they could be absorbed - drying the ferts and creating toxicity... loads of things.
I just had to try it, and I'm full of a lot of questions still. Overall, I'm happy everything has come around and feel like pulling the plug on this experiment was a good idea.
