That's a tricky one ha ha.
For me it's strain pending. Gsc x cheese I leave more on then others.
Or if it's gonna be cured too. Off the line smoking I'll try to remove as much as possible.
But IMO I don't notice the lil sugar leaf after a proper dry n cure.

i do a 3 stage trim

1st cut all water/sugar leaves at harvest and discard to the compost--- hang plants/branches from a clothes line indoors cool dark with good air circulation to dry

2nd @ about 80% dry all flowers are cut from their branches and put into brown bags or 5 gal buckets depending on how dry/wet they really are

3rd trim trim trim all those remaining little leaves that remain---no shaving---just individual cut leaves to expose aroma and shape the flower for bag appeal---this remaining high end trim is saved for hash, edibles, bho. whatever

Crept only trim water leaves and largest of sugar leaves that have stems...
Then dry then trim then tag it for the butchers....

We cut the plant down to individual buds, trim everything, leave the leafs that are close to the bud covered in trichs. then they go to the dry rack for about 5-7 days, then jars for cure
